10 spring roll wrappers

1 cup shredded cabbage

1/2 cup grated carrots

1/2 cup bean sprouts

1/4 cup thinly sliced red and yellow bell peppers

1/4 cup chopped green onions

1/4 cup chopped fresh cilantro

1 tablespoon minced garlic

1 tablespoon grated fresh ginger

2 tablespoons soy sauce

1 teaspoon sesame oil

Salt and pepper, to taste

Oil for frying (vegetable or canola oil works well)

Prep the Filling: In a large mixing bowl, combine the shredded cabbage, grated carrots, bean sprouts, thinly sliced red and yellow bell peppers, chopped green onions, and chopped cilantro. Mix well to ensure all the veggies are evenly distributed.

    Flavor It Up: Add the minced garlic, grated ginger, soy sauce, sesame oil, and a dash of salt and pepper to the vegetable mixture. Toss everything together thoroughly until all ingredients are fully incorporated and the flavors meld.

      Assembly Time: Lay one spring roll wrapper on a clean, flat surface so that one corner is pointing towards you, resembling a diamond shape. Spoon approximately 2 tablespoons of the prepared veggie mixture near the bottom corner of the wrapper.

        Roll it Up: Fold the bottom corner over the filling. Next, fold in the two side corners towards the center, then roll the wrapper tightly away from you to encase the filling. Seal the top corner with a dab of water to secure the roll. Repeat this process with the remaining spring roll wrappers and filling until all spring rolls are assembled.

          Heat the Oil: In a deep frying pan or a pot, pour enough oil to deep fry the spring rolls (about 2 inches deep) and heat it over medium-high heat until it shimmers—this indicates the oil is hot enough to fry (aim for around 350°F or 175°C).

            Fry the Spring Rolls: Carefully place 3-4 spring rolls into the hot oil, making sure not to overcrowd the pan. Fry for about 3-4 minutes on each side, or until they are golden brown and crispy all around. Use a slotted spoon to carefully remove the cooked spring rolls and transfer them to a plate lined with paper towels to soak up any excess oil.
