Crispy Watermelon Popsicles

1 small seedless watermelon (approximately 5 pounds)

1 cup coconut water

1 tablespoon freshly squeezed lime juice

2 tablespoons agave syrup or honey (optional, adjust based on your desired sweetness)

1/4 teaspoon fine sea salt

1 cup unsweetened shredded coconut

1/2 cup fresh mint leaves, chopped (for garnish)

Instructions
 

Prepare the Watermelon: Begin by cutting the watermelon into quarters. Carefully remove the rind and scoop out the flesh, chopping it into small cubes. You should end up with roughly 4 cups of watermelon cubes.

    Blend the Mixture: In a blender, combine the watermelon cubes, coconut water, lime juice, agave syrup or honey (if using), and sea salt. Blend on high speed until the mixture is completely smooth and well combined.

      Optional Straining: For an ultra-smooth popsicle texture, you can strain the blended mixture through a fine-mesh sieve into a bowl to eliminate any pulp or leftover seeds.

        Fill Popsicle Molds: Carefully pour the blended watermelon mixture into popsicle molds, filling each one about three-quarters full. Gently tap the molds on the counter to help remove any trapped air bubbles.

          Add Coconut Coating: Spread the shredded coconut on a shallow plate. After filling the molds, dip the tops of the popsicles into the shredded coconut to create a delightful crunchy layer. Alternatively, you can freeze the popsicles, and then roll them in shredded coconut just before serving for an extra crispy texture.

            Insert Sticks: Take a popsicle stick and insert it into the center of each filled mold, ensuring they are standing upright and centered.

              Freeze: Place the molds in the freezer and allow the popsicles to freeze for a minimum of 4 to 6 hours or until they are completely solid.

                Release from Molds: To remove the popsicles once frozen, run warm water over the outside of the molds for a few seconds. Then, gently pull on the sticks to release the popsicles.

                  Garnish and Serve: Arrange the popsicles on a serving platter and garnish with fresh mint leaves for an added pop of flavor. These delightful treats are perfect to enjoy on a sweltering day!
