1 cup broccoli florets, washed and trimmed

1 bell pepper (red or yellow), sliced into thin strips

1 medium carrot, peeled and julienned

1 cup sugar snap peas, ends trimmed

3 cloves garlic, finely minced

1 inch piece of fresh ginger, grated for flavor

3 tablespoons soy sauce (low-sodium recommended)

1 tablespoon sesame oil for richness

1 tablespoon olive oil (for frying)

1 tablespoon cornstarch to achieve crispiness

1 tablespoon rice vinegar for acidity

1 tablespoon honey or maple syrup (for vegan option)

1 teaspoon sriracha (optional, for a spicy kick)

Sesame seeds for garnish

Green onions, chopped for garnish

Prepare Tofu: Start by pressing the tofu for a minimum of 30 minutes to extract excess moisture. After pressing, cut the tofu into 1-inch cubes. In a mixing bowl, lightly toss these cubes with cornstarch until they are evenly coated for the perfect crispy texture.

    Fry Tofu: Heat a large skillet or wok over medium-high heat, adding olive oil. Once hot, introduce the coated tofu cubes into the skillet. Sauté until each side turns golden brown and crispy, approximately 3-4 minutes per side. Once cooked, remove the tofu from the skillet and set it aside on a plate lined with paper towels.

      Sauté Vegetables: In the same skillet, add a splash of olive oil if needed. Add minced garlic and grated ginger. Sauté for about 30 seconds until fragrant, then add in the broccoli, bell pepper, carrot, and sugar snap peas.
