Ingredients

1 lb (450g) chicken tenderloins

1 cup all-purpose flour

1 cup buttermilk

1 large egg

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1 teaspoon freshly cracked black pepper

1 teaspoon lemon zest

½ teaspoon salt

½ teaspoon cayenne pepper (optional, for added heat)

2 cups panko breadcrumbs

Vegetable oil, for frying

Fresh lemon wedges, for serving

Instructions

Marinate the Chicken: In a spacious bowl, whisk together the buttermilk, egg, garlic powder, onion powder, paprika, salt, and cayenne pepper (if you prefer some heat). Add the chicken tenderloins and ensure they are thoroughly coated in the marinade. Cover the bowl with plastic wrap and place it in the refrigerator for at least 1 hour, or up to overnight, to deepen the flavors.

Prepare the Breading Station: Set up your breading station by placing the all-purpose flour in a shallow dish. In a second shallow dish, mix together the panko breadcrumbs, freshly cracked black pepper, and lemon zest until evenly combined. This will infuse the breadcrumbs with a zesty flavor.

Coat the Tenders: After marinating, take the chicken tenderloins out of the refrigerator. One by one, dredge each tender in the all-purpose flour, shaking off any excess. Then, dip each piece back into the buttermilk mixture, and finally roll it in the seasoned panko breadcrumbs, pressing gently to ensure a good coating.

Heat the Oil: In a large skillet, pour in enough vegetable oil to create a depth of about 1/2 inch. Heat the oil over medium-high heat until it shimmers, reaching approximately 350°F (175°C). To test if the oil is ready, drop in a small piece of the breadcrumb mixture; if it sizzles immediately, the oil is hot enough.

Fry the Chicken Tenders: Carefully place the breaded chicken tenders in the hot oil (working in batches if necessary to avoid overcrowding). Fry for about 4-5 minutes on each side, or until they are golden brown and crispy. Use tongs to turn them for an even cook.

Drain and Serve: Once cooked, transfer the crispy chicken tenders to a plate lined with paper towels to absorb excess oil. Serve them hot with fresh lemon wedges on the side for a zesty finish.
