1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons extra virgin olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon ground cumin

Sea salt and freshly cracked black pepper, to taste

4 large whole wheat or gluten-free wraps

1 cup cherry tomatoes, halved

1 cucumber, diced

½ red onion, finely chopped

1 bell pepper (any color), diced

½ cup Kalamata olives, pitted and sliced

1 cup feta cheese, crumbled (or vegan feta, if preferred)

½ cup fresh parsley, chopped

¼ cup fresh lemon juice

½ teaspoon dried oregano

Crispy Chickpeas: Preheat your oven to 400°F (200°C). In a large mixing bowl, combine the rinsed chickpeas with olive oil, smoked paprika, garlic powder, ground cumin, and a generous pinch of salt and pepper. Toss the mixture until the chickpeas are thoroughly coated in the spices. Spread the chickpeas out evenly on a baking sheet in a single layer. Roast in the preheated oven for 25-30 minutes or until they are golden brown and crispy, shaking the pan halfway through the cooking time for even crispness.

    Prepare the Salad: While the chickpeas are roasting, take a large mixing bowl and add the halved cherry tomatoes, diced cucumber, finely chopped red onion, diced bell pepper, sliced Kalamata olives, crumbled feta cheese, and chopped fresh parsley.
