1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

6 cups romaine lettuce, chopped into bite-sized pieces

1 cup cherry tomatoes, halved

1/2 cup croutons (store-bought or homemade)

1/4 cup grated Parmesan cheese (or vegan alternative)

1/4 cup Caesar dressing (store-bought or homemade)

Fresh lemon wedges, for serving

Preheat the Oven: Begin by preheating your oven to 400°F (200°C) to get it ready for roasting the chickpeas.

    Prepare the Chickpeas: In a mixing bowl, combine the drained and rinsed chickpeas with the olive oil, smoked paprika, garlic powder, salt, and black pepper. Toss everything together until the chickpeas are well-coated with the seasoning.

      Roast the Chickpeas: Spread the seasoned chickpeas in a single, even layer on a parchment-lined baking sheet. Roast them in the preheated oven for 20-25 minutes, or until they are golden brown and crispy. Be sure to stir the chickpeas halfway through the cooking time to ensure they roast evenly.
