1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

4 large flour tortillas

1/4 cup diced red onion

1/2 teaspoon garlic powder

1/2 teaspoon chili powder

1/2 teaspoon ground cumin

Salt and freshly ground black pepper, to taste

4 tablespoons olive oil, divided

1/4 cup fresh cilantro, chopped (optional garnish)

Sour cream and salsa, for serving

Prepare the Chicken Mixture: In a large mixing bowl, combine the shredded chicken, both cheeses (cheddar and Monterey Jack), diced bell peppers, diced red onion, garlic powder, chili powder, cumin, and a pinch of salt and pepper. Stir well to ensure all ingredients are thoroughly mixed and the chicken is evenly coated with the spices.

    Assemble the Quesadillas: Heat a large skillet over medium heat and add 1 tablespoon of olive oil, allowing it to warm. Place one flour tortilla in the skillet, laying it flat. Spread approximately one-fourth of the chicken mixture over one half of the tortilla. Fold the empty side of the tortilla over the filling, pressing down gently to seal.
