2 large boneless, skinless chicken breasts

1 cup seasoned breadcrumbs

1/2 cup all-purpose flour

2 large eggs, beaten

4 large flour tortillas

1 cup romaine lettuce, chopped

1/2 cup Caesar dressing

1/2 cup grated Parmesan cheese

1/4 cup cherry tomatoes, halved (optional)

Olive oil spray or vegetable oil, for frying

Prepare the Chicken: Begin by seasoning the chicken breasts generously with salt and pepper on both sides. To create a breading station, set out three shallow bowls: one filled with flour, the second with beaten eggs, and the third with seasoned breadcrumbs.

    Bread the Chicken: Take one chicken breast and carefully dredge it in the flour, ensuring it’s fully coated and shaking off any excess. Next, dip the floured breast into the beaten eggs, allowing any excess to drip off. Finally, press the chicken into the breadcrumbs, coating it evenly on all sides. Repeat this process for the second chicken breast.

Bake in the preheated oven for 25-30 minutes, or until the chicken is golden brown and cooked through, reaching an internal temperature of 165°F (75°C). Alternatively, for a quicker method, heat oil in a pan over medium heat and pan-fry the chicken for about 6-7 minutes on each side until crispy and fully cooked.

        Prepare the Wraps: While the chicken is baking or frying, prepare the salad mixture. In a large bowl, combine the chopped romaine lettuce, Caesar dressing, grated Parmesan cheese, and halved cherry tomatoes (if using). Toss the ingredients together until the lettuce is well coated with the dressing.
