Ingredients

250 grams halloumi cheese

1/2 cup all-purpose flour

2 large eggs

1 cup panko breadcrumbs

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

1/2 teaspoon dried oregano

Salt and pepper, to taste

Oil for frying (vegetable or olive oil)

Fresh lemon wedges, for serving

Optional: Chopped fresh herbs (like parsley or cilantro) for garnish

Instructions

Prep the Halloumi: Begin by cutting the halloumi cheese into thick finger shapes, approximately 1 cm wide. This thickness helps ensure a delightful bite and promotes even cooking throughout each piece.

Set Up the Breading Station: Create a three-part breading station for efficient coating. In the first shallow dish, add the flour, seasoning it generously with salt and pepper. In the second bowl, crack the eggs and whisk them together until smooth. In the third shallow dish, combine panko breadcrumbs with smoked paprika, garlic powder, dried oregano, and a sprinkle of salt and pepper. Mix thoroughly to ensure even seasoning.

Bread the Halloumi: Take each halloumi finger and first coat it in the seasoned flour, ensuring all sides are covered. Gently shake off any excess flour. Next, dip the floured halloumi into the beaten eggs, allowing any surplus egg to drip off. Finally, roll the finger in the seasoned panko breadcrumbs, pressing down lightly to ensure an even coating. Repeat this process for all halloumi pieces until they are fully breaded.

Heat the Oil: In a large skillet, pour in enough oil to cover the bottom of the pan to a depth of about 1/4 inch. Heat the oil over medium-high until it shimmers but does not smoke. To check if it's ready, drop a few breadcrumbs into the oil; they should sizzle upon contact.

Fry the Halloumi: Carefully add a few breaded halloumi fingers to the hot oil, avoiding overcrowding the pan to maintain proper frying temperature. Fry each side for about 2-3 minutes until they turn a beautiful golden brown and develop a crispy texture. Use a slotted spoon to transfer the cooked halloumi fingers to a paper towel-lined plate to drain any excess oil. Repeat this frying process for the remaining pieces.

Serve: Arrange the crispy halloumi fingers artfully on a serving platter. Serve them piping hot alongside fresh lemon wedges for an added zesty kick. For an optional touch of freshness, sprinkle with chopped herbs.
