Crispy Baked Taco Bowls

4 large flour tortillas

1 cup shredded cheddar cheese

1 cup shredded lettuce

1 cup diced tomatoes

1 cup black beans, rinsed and drained

1 cup cooked corn (fresh, frozen, or canned)

1 avocado, diced

½ cup sour cream

½ cup salsa

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon ground cumin

Salt and pepper to taste

Preheat the Oven: Begin by preheating your oven to 400°F (200°C). This ensures that your taco bowls will bake evenly and achieve that perfect crispy texture.

    Shape the Tortillas: Lightly brush both sides of each flour tortilla with olive oil. Gently press the tortillas into the cups of a muffin tray, molding them to form bowl shapes. If your tortillas are too stiff, microwave them for 10-15 seconds to make them more pliable.

      Add Cheese: To reinforce the structural integrity of the tortilla bowls, sprinkle approximately 2 tablespoons of shredded cheddar cheese into the bottom of each tortilla bowl. This layer of cheese will melt and help hold the tortillas together.

        Season and Bake: Place the muffin tray filled with tortillas in the preheated oven. Bake for about 10-12 minutes, or until the tortilla bowls are golden brown and crispy. Keep an eye on them to ensure they don’t overbake or burn.

          Prepare the Filling: While the tortilla bowls are baking, in a large mixing bowl, combine the rinsed black beans, cooked corn, diced tomatoes, diced avocado, chili powder, cumin, and a pinch of salt and pepper. Mix them together until all ingredients are well integrated.
