Ingredients

2 ripe avocados

1 cup panko breadcrumbs

½ cup all-purpose flour

2 large eggs

1 teaspoon garlic powder

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (optional, for heat)

Salt and pepper, to taste

Cooking spray or olive oil, for greasing

Fresh cilantro or lime wedges, for garnish (optional)

Instructions

Preheat Oven: Begin by preheating your oven to 425°F (220°C). Prepare a baking sheet by lining it with parchment paper, then lightly spray or brush it with olive oil to prevent sticking.

Prepare Avocados: Carefully cut the avocados in half, remove the pit, and gently scoop out the flesh with a spoon. Slice each half into wedges or strips, depending on your preference. Set the avocado pieces aside on a plate.

Set Up Breading Station: Organize your workspace by placing three shallow bowls in a row. In the first bowl, add the all-purpose flour. In the second bowl, whisk the eggs until well blended. In the third bowl, combine the panko breadcrumbs, garlic powder, smoked paprika, cayenne pepper (if using), and a sprinkle of salt and pepper, mixing thoroughly.

Coat Avocado Wedges: Take an avocado wedge and dip it into the flour, ensuring to shake off any excess. Next, immerse it in the beaten eggs, coating it completely. Finally, roll the wedge in the seasoned panko breadcrumbs, pressing gently to adhere the crumbs well. Place the breaded wedge on the prepared baking sheet. Repeat this process for all avocado wedges.

Bake: Once all the avocado wedges are on the baking sheet, lightly spray the tops with cooking spray or drizzle with a bit of olive oil to enhance crispness. Bake in the preheated oven for 15-20 minutes, or until the fries turn a beautiful golden brown and become crispy.

Serve: After baking, remove the sheet from the oven and let the avocado fries cool for a minute. Serve warm, optionally garnished with fresh cilantro or lime wedges for added flavor. These crispy baked avocado fries pair delightfully with your favorite dipping sauce, such as spicy mayo or ranch!
