2 large zucchinis

1 cup ricotta cheese

1/2 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

1 cup all-purpose flour (for dusting)

2 large eggs (for egg wash)

1 cup panko breadcrumbs (for extra crunch)

Prepare the Zucchini: Slice the zucchinis lengthwise into thin strips, aiming for about 1/8 inch in thickness. A mandoline slicer is ideal for achieving uniform sizes. After slicing, arrange them on paper towels and lightly sprinkle with salt. This step helps draw out excess moisture; let them rest for about 20 minutes. Afterward, pat the strips dry with additional paper towels.

    Make the Filling: In a mixing bowl, combine the ricotta cheese, grated Parmesan, shredded mozzarella, one large egg, garlic powder, dried oregano, salt, and black pepper. Stir the mixture thoroughly until everything is well incorporated. Set aside.

      Assemble the Ravioli: Take one zucchini strip and scoop about a tablespoon of the cheese filling onto one end. Gently fold the zucchini over the filling, then place another zucchini strip on top. Press the edges together to seal. For added security, use a fork to crimp the edges. Repeat this process with the remaining zucchini strips and cheese filling.

        Coat the Ravioli: Create a dredging station with three shallow bowls: one filled with all-purpose flour, another with two beaten eggs, and the third with panko breadcrumbs. First, dip each ravioli into the flour, ensuring to shake off any excess. Next, coat it in the egg wash, and finally, roll it in the breadcrumbs until evenly coated. Arrange the coated ravioli on a plate or tray.
