Ingredients

14 oz extra-firm tofu, drained and pressed

1 cup breadcrumbs (choose between panko for extra crunch or regular)

½ cup cornstarch

½ teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon smoked paprika

½ teaspoon salt

¼ teaspoon black pepper

¼ teaspoon cayenne pepper (optional, for a spicy kick)

2 tablespoons soy sauce

1 tablespoon olive oil or sesame oil

Cooking spray (for optimal air frying)

Instructions

Prepare the Tofu: Begin by pressing the tofu for at least 30 minutes, allowing any excess moisture to escape. Once pressed, cut the tofu into bite-sized cubes, approximately 1 inch in size. For even crispiness, gently pat the cubes dry using paper towels.

Create the Coating: In a large mixing bowl, combine the breadcrumbs, cornstarch, garlic powder, onion powder, smoked paprika, salt, black pepper, and optional cayenne pepper. Stir the mixture thoroughly until all ingredients are evenly blended.

Marinate the Tofu: In a medium bowl, whisk together the soy sauce and your choice of oil (olive or sesame). Carefully add the cubed tofu to the marinade, gently tossing to ensure every piece is well-coated. Allow the tofu to marinate for 10-15 minutes so it can absorb the flavorful mixture.

Coat the Tofu: After marinating, take each tofu cube and roll it in the breadcrumb mixture. Press lightly to ensure an even and generous coating. Once coated, set the nuggets aside on a plate.

Preheat the Air Fryer: Set your air fryer to 400°F (200°C) and preheat for about 5 minutes, which will help achieve that perfect crispy texture.

Air Fry the Nuggets: Lightly spray the air fryer basket with cooking spray to prevent sticking. Arrange the tofu nuggets in a single layer, making sure not to overcrowd them to ensure proper air circulation. For added crispiness, lightly spray the tops of the nuggets with a little more cooking spray.

Cooking Time: Air fry the nuggets at 400°F (200°C) for 12-15 minutes. Halfway through the cooking process, flip the nuggets to promote even browning. They are ready when they turn golden brown and crispy to the touch.

Serve: Carefully remove the nuggets from the air fryer and allow them to cool for a minute before serving. Enjoy these delightful crispy nuggets warm, accompanied by your favorite dipping sauces such as sweet chili sauce, tahini, or a creamy vegan ranch dressing.
