2 tablespoons olive oil

3 cloves garlic, finely minced

1 cup cherry tomatoes, halved

1 cup heavy cream

1 cup freshly grated Parmesan cheese

2 cups fresh baby spinach

1 tablespoon balsamic vinegar

Fresh basil leaves, for garnish

Prepare the Chicken: Take the chicken breasts and season both sides generously with garlic powder, Italian seasoning, salt, and black pepper. Ensure the chicken is evenly coated for optimal flavor.

    Sear the Chicken: Heat a large skillet over medium heat and add the olive oil. Once the oil shimmers, carefully place the seasoned chicken breasts in the skillet. Sear the chicken for about 6-7 minutes on each side, or until they achieve a beautiful golden brown color and are cooked through (the internal temperature should reach 165°F/75°C). Once cooked, remove the chicken from the skillet and set aside on a plate.

      Sauté Garlic and Tomatoes: In the same skillet, add the minced garlic and stir for approximately 30 seconds until fragrant—be careful not to burn it. Then, add the halved cherry tomatoes, cooking them for about 2-3 minutes until they begin to soften and burst.

        Make the Cream Sauce: Reduce the heat to low and pour in the heavy cream, stirring well to incorporate everything. Bring the mixture to a gentle simmer, then gradually add the grated Parmesan cheese. Stir continuously until the cheese has melted and the sauce is creamy and velvety.
