Ingredients

2 tablespoons extra virgin olive oil

1 medium-sized onion, finely chopped

3 cloves of garlic, minced

2 cans (14 oz each) fire-roasted diced tomatoes

2 cups vegetable broth (or chicken broth)

1 teaspoon sugar (to balance acidity)

Salt and freshly ground black pepper to taste

1 teaspoon dried oregano

1 cup heavy cream (or coconut cream for a dairy-free alternative)

1 cup fresh basil leaves, roughly chopped

Optional: Grated Parmesan cheese for serving

Optional: Crusty bread for dipping

Instructions

Sauté the Aromatics: In a large pot, warm the olive oil over medium heat. Once the oil is shimmering, add in the finely chopped onion. Sauté for about 5-7 minutes, or until the onion turns translucent and slightly golden. Next, stir in the minced garlic and cook for an additional minute, or until fragrant.

Add Tomatoes and Broth: Carefully pour in the fire-roasted diced tomatoes along with their juices, followed by the vegetable broth. Sprinkle in the sugar, then add salt, pepper, and dried oregano. Stir well to combine. Increase the heat slightly and bring the mixture to a gentle simmer.

Simmer: Allow the soup to simmer uncovered for about 20 minutes. During this time, the flavors will meld beautifully. Remember to stir occasionally to prevent the ingredients from sticking to the bottom of the pot.

Blend the Soup: Once the soup has simmered, take it off the heat. Using an immersion blender, blend the soup until it reaches a smooth consistency. If you don’t have an immersion blender, carefully transfer the soup in batches to a standard blender, ensuring that you leave the lid slightly ajar to allow steam to escape and prevent splattering.

Make it Creamy: Return the now-blended soup to the pot over low heat. Gently stir in the heavy cream (or coconut cream) and the chopped basil, warming it through for about 5 minutes. Taste the soup and adjust the seasoning with additional salt and pepper as desired.

Serve: Ladle the hot and creamy soup into bowls. For an extra touch, sprinkle with grated Parmesan cheese and add a few fresh basil leaves on top for garnish. Serve with slices of crusty bread on the side, perfect for dipping.

              Prep Time: 10 minutes | Total Time: 35 minutes | Servings: 4

                - Presentation Tips: For an elegant presentation, serve the soup in shallow bowls, add a drizzle of olive oil on top, and accompany it with a small plate of warm, crusty bread. Enjoy!
