2 boneless, skinless chicken breasts

1 cup cherry tomatoes, halved

1 cup heavy cream

½ cup chicken broth

1 teaspoon Italian seasoning

1 cup fresh basil leaves, chopped (plus extra for garnish)

1 cup quinoa, rinsed

2 cups vegetable or chicken broth (for quinoa)

Grated Parmesan cheese (for garnish)

Prepare the Quinoa: In a medium saucepan, bring 2 cups of vegetable or chicken broth to a rolling boil. Stir in the rinsed quinoa, then reduce the heat to low. Cover the pot and let it simmer for about 15 minutes, or until all the liquid is absorbed and the quinoa is fluffy. Once done, remove from heat and set aside, keeping it covered to maintain warmth.

    Season the Chicken: While the quinoa is cooking, generously season both sides of the chicken breasts with salt and black pepper, ensuring an even coating for flavor.
