Creamy Taco Pasta with Ground Turkey

8 ounces rotini pasta

1 pound ground turkey

1 tablespoon olive oil

1 small onion, finely chopped

3 cloves garlic, minced

1 packet taco seasoning (approximately 1 ounce)

1 can (15 ounces) diced tomatoes with green chilies, undrained

1 cup chicken broth

1 cup cream cheese, softened

1 cup shredded cheddar cheese

1 cup frozen corn (optional)

Salt and pepper, to taste

Fresh cilantro, for garnish

Optional toppings: sliced jalapeños, sour cream, avocado

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a rolling boil. Add the rotini pasta and cook according to the package instructions until it reaches an al dente texture, usually about 8-10 minutes. Once cooked, drain the pasta and set it aside.

    Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. When the oil is hot, add the finely chopped onion. Sauté for 3-4 minutes until the onion becomes translucent and soft. Next, add the minced garlic and cook for an additional 1 minute, stirring frequently until fragrant.

      Brown the Turkey: Add the ground turkey to the skillet, breaking it apart with a spatula. Cook for about 5-7 minutes until the turkey is browned and cooked through. If there’s excess fat, carefully drain it from the skillet.

        Season & Simmer: Sprinkle the taco seasoning over the browned turkey, ensuring it is evenly coated. Pour in the can of diced tomatoes (including the juices) and the chicken broth. Stir the mixture well to combine all ingredients, then allow it to simmer for about 5 minutes to let the flavors meld.

          Make it Creamy: Reduce the heat to low, and add the softened cream cheese into the skillet. Stir continuously until the cream cheese is fully melted and integrated into the sauce. If desired, toss in the frozen corn at this point for added sweetness and color.

            Combine Pasta & Sauce: Bring back the cooked rotini pasta to the skillet. Gently toss the pasta into the creamy sauce, making sure it is well coated. Gradually incorporate the shredded cheddar cheese, stirring until it has melted and created a luscious, cheesy sauce.
