Creamy Spinach & Mushroom Pasta

300g pasta (fettuccine or your preferred type)

2 tablespoons extra virgin olive oil

2 cloves garlic, finely minced

250g fresh mushrooms, sliced (use cremini or button mushrooms)

150g fresh spinach, thoroughly washed and roughly chopped

1 cup heavy cream

½ cup freshly grated Parmesan cheese

½ teaspoon ground nutmeg

Salt and freshly ground black pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a rolling boil. Add the pasta and cook according to the package instructions until it is al dente. Before draining, reserve about ½ cup of the pasta cooking water for later use. Once cooked, drain the pasta and set it aside.

    Sauté the Garlic: In a large skillet, heat the olive oil over medium heat. Once hot, add the minced garlic and sauté for approximately 1 minute, stirring frequently until the garlic becomes fragrant and slightly golden, being careful not to burn it.

      Add the Mushrooms: Increase the heat slightly and add the sliced mushrooms to the skillet. Cook the mushrooms for about 5-7 minutes, stirring occasionally. You want them to develop a golden-brown color and release their delicious juices.

        Incorporate Spinach: Add the chopped spinach into the skillet. Cook for an additional 2-3 minutes, stirring gently until the spinach is wilted and bright green.

          Prepare the Cream Sauce: Lower the heat to medium-low and pour the heavy cream into the skillet. Stir well to combine all ingredients.
