Creamy Spinach Feta Pasta

8 oz (225g) of your favorite pasta (such as penne, fusilli, or rotini)

2 tablespoons extra virgin olive oil

3 cloves of garlic, minced

1 small onion, finely diced

5 cups of fresh spinach, roughly chopped

1 cup of heavy cream

1 cup of crumbled feta cheese

½ cup of freshly grated Parmesan cheese

1 teaspoon of lemon zest (from about half a lemon)

1 tablespoon of fresh lemon juice (about half a lemon)

Salt and freshly ground black pepper, to taste

A pinch of red pepper flakes (optional, for a hint of heat)

Fresh parsley, chopped, for garnish

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a rolling boil. Add the pasta and cook according to the package instructions until al dente. Before draining, reserve 1 cup of the pasta cooking water. Drain the pasta and set it aside.

    Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Once hot, add the finely diced onion and sauté for about 3-4 minutes until it becomes soft and translucent. Stir in the minced garlic and allow it to cook for an additional minute, until fragrant.

      Add Spinach: Gradually incorporate the fresh spinach into the skillet. Stir continuously for about 2-3 minutes, or until the spinach is wilted and vibrant in color.

        Make the Cream Sauce: Lower the heat to a gentle simmer. Pour in the heavy cream, followed by the crumbled feta and grated Parmesan cheese. Stir until the cheeses have melted and the mixture transforms into a creamy sauce.

          Combine Pasta and Sauce: Add the drained pasta to the skillet with the creamy spinach and feta sauce. If the sauce appears too thick, slowly mix in some of the reserved pasta water, a little at a time, until you achieve your desired consistency.
