2 boneless, skinless chicken breasts

1 cup fresh spinach, roughly chopped

1 cup mushrooms, sliced (button or cremini work well)

1 small onion, finely chopped

2 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

2 tablespoons olive oil

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh parsley, chopped for garnish (optional)

Prepare the Chicken: Start by seasoning the chicken breasts generously on both sides with salt, pepper, and Italian seasoning. This enhances the flavor of the chicken.

    Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the seasoned chicken breasts to the skillet. Sear them for about 5-7 minutes on each side, or until they are golden brown and fully cooked through. After cooking, remove the chicken from the skillet and set it aside on a plate.

      Sauté the Aromatics: In the same skillet, without wiping it out, add the chopped onion and minced garlic. Sauté for about 2-3 minutes, stirring occasionally, until the onion turns translucent and the garlic becomes fragrant.

        Cook the Mushrooms: Add the sliced mushrooms to the skillet with the onions and garlic. Cook for an additional 5 minutes, stirring occasionally, until the mushrooms are browned and have released most of their moisture.

          Combine with Cream: Pour in the chicken broth and allow it to come to a gentle simmer. Once simmering, stir in the heavy cream and grated Parmesan cheese. Mix well until the cheese melts completely and the sauce becomes creamy and rich.
