2 heads of garlic

1 tablespoon olive oil

1 cup cream cheese, softened to room temperature

1/2 cup sour cream

1/4 cup mayonnaise

1 teaspoon fresh lemon juice

1/4 teaspoon freshly ground black pepper

1/4 teaspoon sea salt

2 tablespoons fresh parsley, finely chopped (optional, for garnish)

1 tablespoon fresh chives, finely chopped (optional, for garnish)

Instructions
 

Preheat the Oven: Set your oven temperature to 400°F (200°C) and allow it to preheat fully.

    Prepare the Garlic: Take the heads of garlic and slice off the top quarter, exposing the individual cloves. Place the garlic heads onto a sheet of aluminum foil and drizzle olive oil evenly over them. Wrap the foil tightly around the garlic to create a sealed packet.

      Roast the Garlic: Place the wrapped garlic directly on the oven rack. Roast for approximately 30-35 minutes until the cloves are soft and lightly caramelized. Once done, carefully remove from the oven and allow the packet to cool just enough to handle.

        Extract the Garlic: Once the garlic is cool, gently squeeze each clove from its skin directly into a mixing bowl, discarding the skins once empty.

          Combine Ingredients: Using a fork or a hand mixer, mash the roasted garlic into a smooth paste. Once smooth, add the softened cream cheese, sour cream, mayonnaise, lemon juice, black pepper, and sea salt. Mix thoroughly until the mixture is well blended and creamy.
