4 cups fresh corn kernels (approximately 6-8 ears of corn)

1 tablespoon olive oil

1 teaspoon smoked paprika

½ teaspoon garlic powder

½ teaspoon onion powder

Salt and pepper, to taste

1 cup cream cheese, softened to room temperature

1 cup sour cream

1 cup shredded sharp cheddar cheese

½ cup finely chopped green onions (plus extra for garnish)

½ cup diced red bell pepper

2 tablespoons fresh cilantro, chopped (optional)

Tortilla chips or fresh vegetable sticks, for serving

Preheat the Oven: Start by preheating your oven to 400°F (200°C), ensuring it's hot enough for roasting the corn.

    Roast the Corn: In a large mixing bowl, combine the fresh corn kernels with olive oil, smoked paprika, garlic powder, onion powder, and a sprinkle of salt and pepper. Toss well to evenly coat all the kernels. Spread the mixture out on a baking sheet in an even layer. Roast in the preheated oven for 20-25 minutes, or until the corn is golden and slightly charred, stirring the mixture halfway through to promote even roasting.

      Prepare the Dip Base: While the corn is roasting, take another large mixing bowl and add the softened cream cheese, sour cream, and shredded cheddar cheese. Using a hand mixer or a sturdy spatula, blend the ingredients together until they are smooth and creamy.
