8 oz (225 g) rotini pasta

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red onion, finely chopped

1/2 cup black olives, sliced

1/2 cup feta cheese, crumbled

1/2 cup pesto (store-bought or homemade)

1/2 cup creamy dressing (like ranch or Greek yogurt dressing)

1/4 cup grated Parmesan cheese

Salt and freshly ground black pepper to taste

Fresh basil leaves, for garnish

Cook the Pasta: In a large pot, bring salted water to a rolling boil. Add the rotini pasta and cook according to package instructions until al dente. Once cooked, drain the pasta and rinse it under cold running water to cool it down and halt the cooking process.

    Prepare the Vegetables: While the pasta is cooking, take a large mixing bowl and add the halved cherry tomatoes, diced cucumber, finely chopped red onion, and sliced black olives. Gently toss to combine and set aside.

      Make the Dressing: In a separate bowl, whisk together the pesto and creamy dressing until smooth and well combined. For a thinner dressing, you can gradually incorporate a drizzle of olive oil or a small amount of water until your desired consistency is reached.
