1 cup cherry tomatoes, halved

1 medium zucchini, diced

1 yellow bell pepper, diced

1 cup fresh spinach, roughly chopped

2 cloves garlic, minced

1 cup heavy cream

1/2 cup freshly grated Parmesan cheese

1 teaspoon Italian seasoning blend

Salt and freshly ground black pepper, to taste

Fresh basil leaves, for garnish (optional)

Cook the Pasta: In a large pot, bring salted water to a rolling boil. Add the pasta and cook according to the package instructions until al dente. Reserve 1/2 cup of the pasta water, then drain the pasta and set it aside.

    Sauté the Vegetables: In a large skillet, heat the extra virgin olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, or until fragrant. Next, add the diced zucchini and yellow bell pepper to the skillet. Cook for approximately 5 minutes, stirring occasionally, until the vegetables are tender but still vibrant.

      Incorporate Tomatoes and Spinach: Add the halved cherry tomatoes and roughly chopped spinach to the skillet. Stir together and cook for an additional 2 minutes, just until the spinach wilts and the tomatoes begin to soften.
