Creamy Mac & Cheese Cups

2 cups elbow macaroni

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

2 cups whole milk

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1 teaspoon Dijon mustard

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

1/2 cup breadcrumbs

2 tablespoons grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Cook the Pasta: In a large pot, bring salted water to a rolling boil. Add the elbow macaroni and cook according to the package instructions until al dente, usually about 7-8 minutes. Once cooked, drain the pasta in a colander and set aside.

    Make the Cheese Sauce: Return the empty pot to medium heat and add the unsalted butter. Allow the butter to melt completely. Once melted, whisk in the all-purpose flour to create a roux, cooking for about 1 minute until it turns a light golden color. Gradually pour in the whole milk while continuously whisking to avoid any lumps. Keep whisking for about 3-5 minutes, or until the sauce thickens and becomes smooth.

      Add Cheeses and Seasonings: Remove the pot from heat. Stir in the shredded cheddar and mozzarella cheese, ensuring they fully melt into the sauce. Then, add the Dijon mustard, garlic powder, onion powder, and season generously with salt and pepper. Mix everything until well combined.

        Combine Pasta and Sauce: Carefully fold the cooked macaroni into the cheesy sauce. Use a spatula to ensure every piece of pasta is generously coated.

          Prepare for Baking: Preheat your oven to 350°F (175°C). Lightly grease a muffin tin with cooking spray or butter. Using a spoon or a small scoop, fill each muffin cup with the mac and cheese mixture, pressing down slightly to pack it in well.

            Top with Breadcrumbs: In a separate small bowl, combine the breadcrumbs and grated Parmesan cheese. Mix well, then sprinkle this mixture generously over the top of each filled muffin cup, creating a nice crunchy topping.

              Bake: Place your muffin tin in the preheated oven and bake for approximately 20-25 minutes, or until the tops turn golden brown and crispy.

                Cool & Serve: Allow the mac and cheese cups to cool for a few minutes after removing them from the oven. Carefully lift them out of the muffin tin using a spoon. Garnish each cup with a sprinkle of fresh chopped parsley for an extra pop of color and flavor.
