Creamy Lemon Dill Salmon Pasta

8 oz (225g) spaghetti or linguine

2 tablespoons olive oil

1 lb (450g) salmon fillet, skin removed

Salt and pepper, to taste

2 cloves garlic, minced

Zest of 1 lemon

1 cup heavy cream

1 tablespoon Dijon mustard

Juice of 1 lemon

1/4 cup grated Parmesan cheese

2 tablespoons fresh dill, chopped (or 1 tablespoon dried dill)

1 cup cherry tomatoes, halved

Fresh dill sprigs, for garnish

Lemon wedges, for serving

Instructions
 

Cook the Pasta:

    Begin by bringing a large pot of salted water to a rolling boil. Add the spaghetti or linguine and cook according to the package directions until al dente. Once cooked, reserve 1 cup of the pasta water for later use, then drain the remaining water and set the pasta aside.

      Prepare the Salmon:

        In a large skillet, heat the olive oil over medium heat. Season the salmon fillet generously with salt and pepper. When the oil is shimmering, place the salmon in the skillet skin-side down. Let it cook undisturbed for about 4-5 minutes, forming a golden crust. Carefully flip the salmon and continue to cook for another 3-4 minutes, or until the salmon is fully cooked and flakes easily with a fork. Remove the salmon from the skillet and place it on a plate to cool slightly before breaking it into bite-sized pieces.

          Make the Sauce:

            Using the same skillet, reduce the heat to low and add the minced garlic. Sauté for approximately 30 seconds until fragrant, being careful not to burn it. Next, stir in the lemon zest, heavy cream, and Dijon mustard, combining the ingredients thoroughly. Allow the mixture to come to a gentle bubble, cooking for about 2-3 minutes.

              Add Lemon and Cheese:

                Squeeze the juice of one lemon into the sauce, then fold in the grated Parmesan cheese and chopped fresh dill. If the sauce appears too thick, gradually add some of the reserved pasta water until you achieve your desired consistency. Taste the sauce and adjust seasoning with additional salt and pepper as needed.

                  Combine Everything:

                    Gently fold the flaked salmon into the skillet, along with the halved cherry tomatoes. Stir carefully, allowing the sauce and salmon to warm together over low heat until heated through but not boiling.

                      Toss Pasta:

                        Add the drained pasta to the skillet, tossing gently to coat the pasta evenly in the creamy lemon dill sauce. If the sauce needs a little more moisture, add extra reserved pasta water as needed to ensure a creamy coating.

                          Serve:
