2 tablespoons olive oil

500g (1 lb) boneless, skinless chicken breast, diced

4 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper, to taste

150g (5 oz) fresh spinach leaves

250ml (1 cup) heavy cream

100g (3.5 oz) cream cheese, softened

50g (1.5 oz) grated Parmesan cheese

Zest and juice of 1 lemon

Fresh parsley, chopped for garnish

Cook the Pasta: Begin by filling a large pot with water and adding a generous pinch of salt. Bring the water to a rolling boil. Once boiling, add the penne pasta and cook it according to the package instructions until it reaches an al dente texture. Before draining, carefully reserve 1 cup of the starchy pasta water. Drain the rest and set the penne aside.

    Sauté the Chicken: In a large skillet set over medium-high heat, add the olive oil. Once the oil is shimmering, toss in the diced chicken. Season with a sprinkle of salt, pepper, and Italian seasoning. Cook the chicken for about 6-8 minutes, stirring occasionally, until the pieces are golden brown and thoroughly cooked. Once cooked, transfer the chicken to a plate and set aside.
