Ingredients

1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

2 cups mushrooms, sliced (preferably cremini or button)

1 medium onion, diced

3 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1 cup fresh spinach, roughly chopped

2 tablespoons olive oil

1 teaspoon dried thyme

1 teaspoon dried Italian seasoning

Salt and pepper to taste

1/4 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions

Sauté the Chicken: Heat the olive oil in a large skillet over medium-high heat. Once hot, add the bite-sized chicken pieces, seasoning them with salt, pepper, dried thyme, and Italian seasoning. Cook for approximately 5-7 minutes, stirring occasionally, until the chicken is nicely browned and cooked through. Transfer the chicken to a plate and set aside.

Cook the Aromatics: In the same skillet, add the diced onion and sliced mushrooms, stirring to combine. Sauté for about 5 minutes, or until the onions are translucent and the mushrooms have released their moisture and begun to brown.

Add Garlic: Incorporate the minced garlic into the skillet and sauté for an additional 1-2 minutes, allowing it to cook until fragrant.

Make the Cream Sauce: Pour in the chicken broth, using a wooden spoon to scrape up any browned bits from the bottom of the skillet, which adds flavor to the dish. Bring the mixture to a gentle simmer and let it reduce slightly for about 3-4 minutes.

Add Cream and Spinach: Reduce the heat and stir in the heavy cream, allowing it to blend into the broth. Next, add the chopped fresh spinach, giving it a gentle stir to help it wilt down in the sauce. This should take about 2-3 minutes.

Combine Everything: Return the cooked chicken to the skillet, mixing it well with the creamy mushroom sauce. Let the chicken warm through, then stir in the grated Parmesan cheese until it melts and the sauce becomes creamy.

Taste and Adjust: Sample the sauce and adjust the seasoning with additional salt and pepper if necessary. If the sauce is too thick, you can add a splash more chicken broth to achieve your preferred consistency.

Serve: Remove from heat and garnish with freshly chopped parsley for a pop of color. Serve the dish hot and enjoy it alongside rice, pasta, or with a slice of crusty bread to soak up the rich and flavorful sauce.
