Creamy Chicken and Broccoli Pasta Bake

12 oz (340 g) penne pasta

2 cups cooked chicken breast, shredded

2 cups fresh broccoli florets

2 tablespoons olive oil

3 cloves garlic, minced

1 medium onion, finely chopped

1 teaspoon dried Italian herbs (a mix of oregano, basil, and thyme)

1/2 teaspoon red pepper flakes (optional for added heat)

2 cups heavy cream

1 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

Salt and pepper to taste

Fresh parsley, chopped, for garnish

Cook the Pasta and Broccoli: Preheat your oven to 375°F (190°C). In a large pot, bring salted water to a rolling boil. Add the penne pasta and cook according to package instructions until al dente. Two to three minutes before the pasta is done, add the fresh broccoli florets to the boiling water to lightly steam. Once cooked, drain the pasta and broccoli, then set aside.

    Sauté the Vegetables: In a large skillet over medium heat, warm the olive oil. Add the finely chopped onion and sauté until it becomes translucent, approximately 3-4 minutes. Next, add the minced garlic and continue to cook for an additional 1-2 minutes, stirring frequently until the garlic is fragrant.

      Prepare the Creamy Sauce: Into the skillet with the sautéed onion and garlic, add the shredded chicken, dried Italian herbs, and red pepper flakes (if using). Pour in the heavy cream and half of the grated Parmesan cheese. Stir constantly to combine all ingredients evenly and heat through. Season with salt and pepper according to your preference.

        Combine Pasta and Sauce: In a large mixing bowl, generously mix together the cooked penne pasta, broccoli, and the creamy chicken sauce until the pasta is thoroughly coated with the sauce.
