1 medium head of cauliflower (approximately 2-3 pounds), cut into bite-sized florets

4 tablespoons unsalted butter

1 cup sharp cheddar cheese, finely grated

1/4 cup cream cheese, softened to room temperature

1/2 cup milk (adjust to achieve desired consistency)

1 clove garlic, minced

Salt and freshly cracked black pepper, to taste

Fresh chives or parsley, finely chopped (for garnish)

Prepare the Cauliflower: In a large pot, fill with salted water and bring it to a rolling boil. Carefully add the cauliflower florets and cook for approximately 10-12 minutes, or until they are tender enough to be easily pierced with a fork. Once cooked, drain the cauliflower and set it aside.
