2 medium carrots, diced

2 celery stalks, diced

1 cup Yukon Gold potatoes, peeled and diced

4 cups chicken broth or vegetable broth

1 teaspoon dried thyme

1 bay leaf

1 tablespoon Dijon mustard

1 cup heavy cream

1 cup assorted charcuterie meats (such as salami, prosciutto, and chorizo), chopped into bite-sized pieces

1 cup assorted cheeses (like Gruyère, sharp cheddar, and blue cheese), shredded

Salt and freshly ground black pepper, to taste

Fresh parsley, chopped (for garnish)

Sauté the Base: In a large, heavy-bottomed pot, heat the olive oil over medium heat. Once hot, add the chopped onion and minced garlic. Sauté for about 3-4 minutes, stirring occasionally, until the onion becomes translucent and fragrant.

    Add Vegetables: Stir in the diced carrots and celery. Cook for an additional 5 minutes, stirring frequently, until the vegetables begin to soften and their flavors meld together.

      Incorporate Potatoes: Add the diced Yukon Gold potatoes, followed by the chicken or vegetable broth, dried thyme, and bay leaf. Increase the heat to high, bringing the mixture to a boil. Once boiling, reduce the heat to a low simmer, cover, and let it cook for about 15-20 minutes, or until the potatoes are fork-tender.

        Creamy Blend: After the potatoes are cooked, carefully remove the bay leaf from the pot. Use an immersion blender to puree the soup until it reaches a smooth and creamy consistency. If you don’t have an immersion blender, transfer the soup in batches to a countertop blender, ensuring you allow steam to escape to avoid spills. Blend until silky smooth.

          Add Flavors: Return the pureed soup back to the pot over low heat. Stir in the Dijon mustard and heavy cream, mixing well to incorporate. Taste and season with salt and freshly ground black pepper to your liking.
