Ingredients

1 large ripe cantaloupe, peeled, seeded, and cubed

1 cup cucumber, peeled and diced

1/2 cup Greek yogurt

1/4 cup fresh mint leaves, plus extra for garnish

2 tablespoons fresh lime juice

1 tablespoon honey (optional, based on desired sweetness)

1 clove garlic, minced

Salt and black pepper, to taste

1 small red bell pepper, diced (for garnish)

Instructions

Prepare the Ingredients: Begin by carefully peeling the cantaloupe, removing the seeds, and cutting it into cubes. Next, peel and dice the cucumber into small pieces. Also, mince the garlic and chop the fresh mint leaves. Set aside for blending.

Blend the Gazpacho: In a high-speed blender, combine the cubed cantaloupe, diced cucumber, Greek yogurt, chopped mint leaves, fresh lime juice, honey (if you prefer a sweeter taste), and the minced garlic. Blend all the ingredients together until the mixture is completely smooth and creamy in texture, ensuring there are no lumps.

Season the Mixture: After blending, taste the gazpacho and season it with salt and black pepper according to your preference. If desired, you can adjust the acidity by adding more lime juice or sweeten it with additional honey.

Chill the Gazpacho: Once seasoned, transfer the gazpacho into a large bowl or airtight container. Cover it well and place it in the refrigerator to chill for at least 2 hours. This allows the flavors to meld beautifully and the soup to cool down thoroughly.

Serve: After chilling, give the gazpacho a thorough stir to recombine any ingredients that may have settled. Pour the gazpacho into serving bowls and garnish each portion with a sprinkle of diced red bell pepper and some extra mint leaves for an appealing presentation.

Enjoy: For an added layer of richness, consider drizzling a little olive oil on top before serving. This creamy gazpacho is ideal as a refreshing appetizer or a light summer meal, sure to delight your taste buds!
