Creamy Cajun Pasta with Turkey

12 oz (340g) fettuccine or penne pasta

1 lb (450g) ground turkey

2 tablespoons Cajun seasoning

1 tablespoon olive oil

1 medium onion, finely diced

3 cloves garlic, minced

1 red bell pepper, diced

1 cup heavy cream

1 cup chicken broth

1 cup shredded Parmesan cheese

1 cup fresh spinach, roughly chopped

Salt and freshly ground black pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta:

    In a large pot, bring salted water to a rolling boil. Add the fettuccine or penne and cook according to the package directions until al dente. Once cooked, drain the pasta in a colander and set aside for later use.

      Sauté the Turkey:

        Heat a large skillet over medium heat and add the olive oil. When the oil is shimmering, add the ground turkey, seasoning with Cajun seasoning, salt, and pepper. Cook the turkey for about 5-7 minutes, using a wooden spoon to break it apart, until it is evenly browned and no longer pink. Once cooked through, remove the turkey from the skillet and set it aside on a plate.
