Creamy Broccoli Cheddar Orzo

1 cup orzo pasta

2 cups broccoli florets

2 tablespoons unsalted butter

1 small onion, finely diced

3 cloves garlic, minced

4 cups vegetable broth

1 cup milk (or heavy cream for extra creaminess)

1 ½ cups sharp cheddar cheese, grated

½ teaspoon black pepper, freshly ground

¼ teaspoon red pepper flakes (optional for heat)

Salt to taste

Fresh parsley, finely chopped, for garnish

Cook the Orzo and Broccoli: Bring a large pot of salted water to a boil. Add the orzo and cook according to the package instructions until al dente. In the final 2 minutes of cooking, add the broccoli florets to the pot. Once done, drain the orzo and broccoli together and set them aside.

    Sauté the Aromatics: In the same pot, melt the unsalted butter over medium heat. Once melted, add the finely diced onion. Sauté for about 5 minutes or until the onion is soft and translucent. Add the minced garlic and continue to cook for an additional 1-2 minutes, ensuring the garlic becomes fragrant but does not burn.

      Prepare the Cream Sauce: Slowly pour in the vegetable broth and bring the mixture to a gentle simmer. Once simmering, reduce the heat to low and gradually add the milk (or heavy cream) while stirring continuously. Allow the sauce to simmer gently for about 2-3 minutes so it can thicken slightly.

        Incorporate Cheese and Seasoning: Gradually add the grated cheddar cheese to the sauce, a handful at a time, stirring well after each addition to ensure the cheese melts completely before adding more.
