2 ripe avocados, halved and pitted

1/4 cup Greek yogurt (or substitute with sour cream for a richer taste)

1 tablespoon fresh lemon juice

1 tablespoon extra virgin olive oil

1 garlic clove, minced

1 cup cherry tomatoes, halved

1/2 cup corn (can be fresh, canned, or frozen)

1/4 cup red onion, finely chopped

1/2 cup bell pepper (any color), diced

1/4 cup fresh cilantro or parsley, chopped

Salt and pepper, to taste

Optional: Crushed red pepper flakes for added heat

Cook the Pasta: In a large pot, bring salted water to a rolling boil. Add the pasta and cook according to package directions until al dente. Once cooked, drain the pasta and rinse it under cold water to halt the cooking process. Set aside to cool completely.
