1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 cup bell pepper, finely chopped (choose your favorite color)

1 cup black olives, sliced

1/2 cup red onion, finely chopped

1/2 cup feta cheese, crumbled

1/4 cup fresh basil, chopped

1/4 cup fresh parsley, chopped

1/3 cup extra virgin olive oil

2 tbsp red wine vinegar

1 tbsp Dijon mustard

1 clove garlic, minced

Salt and pepper to taste

8 small cups or serving bowls

Cook the Spaghetti: Bring a large pot of salted water to a rolling boil. Add the spaghetti and cook according to package directions until al dente, typically about 8-10 minutes. Once cooked, drain the spaghetti in a colander and rinse under cold water to stop the cooking process. Allow it to cool completely while you prepare the salad components.
