Ingredients

2 cups rotini pasta

2 cups cooked chicken breast, shredded (approximately 2-3 chicken breasts)

1 cup cherry tomatoes, halved

1 cup black beans, drained and rinsed

1 cup corn (can be fresh, canned, or frozen)

1 small red bell pepper, diced

1 small green bell pepper, diced

1/2 cup red onion, finely chopped

1 avocado, diced

1/4 cup fresh cilantro, chopped

1/2 cup shredded cheddar cheese

1/4 cup olive oil

2 tablespoons fresh lime juice

1 teaspoon chili powder

1 teaspoon ground cumin

Salt and pepper, to taste

Instructions

Cook Pasta: Begin by bringing a large pot of salted water to a rolling boil. Add the rotini pasta and cook according to package instructions until al dente, typically around 8-10 minutes. Once cooked, drain the pasta and rinse it under cold water to stop the cooking process and cool it down. Set the drained pasta aside.

Prepare Chicken: If you haven't yet cooked the chicken breasts, you can do so by either boiling them in water until fully cooked (about 15-20 minutes) or grilling them for added flavor. Once cooked, let the chicken cool slightly. Shred it into bite-sized pieces using two forks or your hands.

Combine Ingredients: In a large mixing bowl, combine the cooled rotini pasta, shredded chicken, halved cherry tomatoes, black beans, corn, diced red bell pepper, diced green bell pepper, finely chopped red onion, and fresh chopped cilantro. Gently toss the ingredients together to ensure they are evenly mixed.

Make Dressing: In a separate small bowl or jar, whisk together the olive oil, fresh lime juice, chili powder, ground cumin, and a pinch of salt and pepper. Whisk until the mixture is well blended and emulsified.

Dress Salad: Drizzle the dressing over the pasta mixture in the large bowl. Toss everything together thoroughly to make sure all ingredients are well coated with the dressing.

Add Avocado and Cheese: Carefully fold in the diced avocado and shredded cheddar cheese to the salad. Take care not to mash the avocado, ensuring it retains its shape.

Chill: Once fully mixed, cover the bowl with plastic wrap or a lid. Refrigerate the salad for at least 30 minutes. This chilling time allows the flavors to meld beautifully.

Serve: Before serving, give the salad a gentle toss one last time. Serve chilled, and enjoy the refreshing flavors of your Chilly Southwest Chicken Pasta Salad!
