Ingredients

1 ½ cups all-purpose flour

½ cup granulated sugar

2 teaspoons baking powder

½ teaspoon salt

½ teaspoon ground cinnamon

1 large egg

¾ cup whole milk

⅓ cup unsalted butter, melted and slightly cooled

1 teaspoon vanilla extract

½ cup granulated sugar (for the cinnamon sugar coating)

2 teaspoons ground cinnamon (for the cinnamon sugar coating)

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Prepare a standard muffin tin by greasing it lightly with cooking spray or lining it with paper muffin liners for easy removal.

Mix Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, ½ cup of granulated sugar, baking powder, salt, and ½ teaspoon of ground cinnamon. Whisk them together until they are fully blended and there are no lumps.

Combine Wet Ingredients: In a separate bowl, crack the large egg and whisk it until lightly beaten. Then add the whole milk, melted (and slightly cooled) unsalted butter, and vanilla extract. Mix until the wet ingredients are smooth and well integrated.

Combine Wet and Dry: Gently pour the wet mixture into the dry mixture. Stir using a spatula or spoon until just combined. Be cautious not to overmix; a few small lumps in the batter are perfectly fine.

Fill Muffin Tin: Using a spoon or a cookie scoop, evenly distribute the muffin batter into the prepared muffin cups, filling each about ¾ of the way full. This allows room for the muffins to rise.

Bake: Place the muffin tin in the preheated oven and bake for 15 to 18 minutes. They are ready when the tops are golden brown and a toothpick inserted into the center of a muffin comes out clean.

Prepare Cinnamon Sugar Coating: While the muffins are baking, combine ½ cup of granulated sugar with 2 teaspoons of ground cinnamon in a small bowl. Stir well to mix them together evenly.

Coat Muffins: After baking, allow the muffins to cool in the pan for about 5 minutes. Then gently remove them from the tin. Roll each warm muffin in the cinnamon sugar mixture until completely coated for that sweet, crunchy exterior.

Serve: These delightful muffins can be enjoyed warm right out of the oven or at room temperature. For the best flavor and texture, savor them fresh!

Prep Time, Total Time, Servings: 15 minutes | 30 minutes | Makes 12 muffins.

                      - Presentation Tips: Arrange the cinnamon sugar donut muffins on a festive platter. You can sprinkle a little more cinnamon sugar on top for an extra touch, or serve alongside a warm cup of coffee or cocoa. Enjoy!
