1 ½ cups grated zucchini (approximately 1 medium zucchini)

1 cup all-purpose flour

½ cup whole wheat flour

½ cup unsweetened cocoa powder

2 large eggs

1 cup granulated sugar

½ cup packed brown sugar

½ cup vegetable oil (or melted coconut oil)

1 teaspoon vanilla extract

1 cup semi-sweet chocolate chips (divided)

½ teaspoon ground cinnamon (optional)

¼ cup chopped walnuts (optional, for added crunch)

    Prepare the Zucchini: Grate the zucchini using a box grater. To remove excess moisture, place the grated zucchini in a clean kitchen towel or cheesecloth and twist to squeeze out as much liquid as possible. Set the zucchini aside for later use.

      Mix the Dry Ingredients: In a large mixing bowl, combine all-purpose flour, whole wheat flour, cocoa powder, baking soda, baking powder, salt, and ground cinnamon (if you choose to use it). Whisk together until the mixture is well blended.
