Chipotle Turkey & Avocado Burrito Bake

1 lb ground turkey

1 can (15 oz) black beans, rinsed and drained

1 cup cooked brown rice

1 cup corn kernels (fresh, canned, or frozen)

1 cup diced tomatoes (canned or fresh)

1 small onion, finely chopped

2 cloves garlic, minced

1-2 tablespoons chipotle chili powder (adjust for desired heat)

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and pepper, to taste

1/2 cup shredded cheese (cheddar or Mexican blend)

2 large ripe avocados, diced

4 large flour tortillas

1 cup salsa (for topping)

Fresh cilantro, chopped (for garnish)

Instructions
 

Preheat the Oven: Set your oven to 375°F (190°C) so it’s hot and ready for baking.

    Cook the Turkey: In a large skillet, heat a splash of olive oil over medium heat. Add the finely chopped onion and sauté until it becomes translucent, approximately 3-4 minutes. Add in the minced garlic, stirring briefly before adding the ground turkey. Cook the turkey until it’s browned and fully cooked, breaking it apart with a spatula for even texture.

      Add Flavor: Incorporate the rinsed black beans, cooked brown rice, corn kernels, diced tomatoes, chipotle chili powder, cumin, smoked paprika, and a pinch of salt and pepper. Stir well to combine all the ingredients and let them cook together for an additional 5 minutes to meld the flavors. Remove from heat and allow to cool slightly.

        Prepare the Tortilla Base: In a 9x13-inch baking dish, lay down two flour tortillas side by side, trimming the edges if necessary to cover the bottom of the dish. Evenly spoon half of the turkey mixture over this layer of tortillas, spreading it out gently.

          Layer Avocados and Cheese: Scatter half of the diced avocado evenly over the turkey mixture, followed by half of the shredded cheese. Place another layer of two tortillas on top.

            Add the Remaining Filling: Spoon the rest of the turkey mixture over the second layer of tortillas, making sure to spread it out evenly. Top with the remaining diced avocado and shredded cheese for a rich finish.

              Bake: Pour the salsa over the top of the assembled burrito bake, adding extra if you like it saucier. Cover the baking dish with aluminum foil and place it in the preheated oven. Bake for 25 minutes. After this, remove the foil and continue baking for an additional 10 minutes until the cheese is melted and bubbling.
