Chili Cheese Turkey Pasta Poppers

8 oz. small pasta shells (such as elbow or conchiglie)

1 lb. ground turkey

1 cup sharp cheddar cheese, shredded

1 cup cream cheese, softened to room temperature

1 can (15 oz.) chili (with or without beans, depending on preference)

1 tsp garlic powder

1 tsp onion powder

½ tsp ground cumin

½ tsp smoked paprika

Salt and black pepper to taste

1 cup diced tomatoes (canned or fresh)

½ cup green onions, chopped (for garnish)

Olive oil for frying (or use cooking spray for a baking option)

Instructions
 

Cook the Pasta: Fill a large pot with salted water and bring it to a rolling boil. Add the pasta shells and cook according to the package instructions until they reach an al dente texture. Once cooked, drain the shells in a colander and set them aside to cool slightly.

    Prepare the Turkey Mixture: In a large skillet over medium heat, drizzle a bit of olive oil. Add the ground turkey to the pan and cook, breaking it apart with a spatula, until it’s nicely browned and fully cooked through. Season the turkey with garlic powder, onion powder, cumin, smoked paprika, and add a sprinkle of salt and pepper. Mix well to combine the spices evenly throughout the meat.

      Mix in the Cheeses: Lower the heat to low, and then add the softened cream cheese to the cooked turkey mixture. Stir until the cream cheese has melted and combines into a creamy texture. Gradually fold in the shredded sharp cheddar cheese until it melts and blends with the mixture.

        Combine Ingredients: In a large mixing bowl, combine the cooked pasta shells with the creamy turkey and cheese mixture. Gently stir in the chili and diced tomatoes until everything is evenly mixed and cohesive.

          Stuff the Pasta Shells: If you plan to bake them, preheat your oven to 375°F (190°C). If frying, heat oil in a deep pan over medium heat. Using a spoon, carefully fill each pasta shell with the chili cheese turkey mixture. Place each stuffed shell into a greased baking dish if baking, or set aside if you are frying them.

            Bake or Fry:

              - Baking: Cover the baking dish with aluminum foil and bake in the preheated oven for 20-25 minutes. Remove the foil towards the end, and bake for an additional 10 minutes until you achieve a bubbly and golden top.

                - Frying: Gently place the filled pasta shells in the hot oil, cooking them for about 2-3 minutes on each side or until they are beautifully golden brown. Once cooked, remove them from the oil and let them drain on paper towels.
