Ingredients
  

1 can (15 oz) chickpeas, rinsed and thoroughly drained

1 cup cherry tomatoes, halved

1 medium cucumber, diced into bite-sized pieces

1/2 medium red onion, finely chopped

1 bell pepper (red or yellow), diced

1 cup Kalamata olives, pitted and halved

1 cup feta cheese, crumbled

1/4 cup fresh parsley, finely chopped

1/4 cup fresh mint, finely chopped

Salt and black pepper to taste

Lemon Vinaigrette:

1/4 cup extra virgin olive oil

Juice of 2 fresh lemons

1 teaspoon Dijon mustard

1 clove garlic, minced

1 teaspoon dried oregano

Salt and black pepper to taste

Instructions
 

In a large mixing bowl, add the rinsed chickpeas, halved cherry tomatoes, diced cucumber, finely chopped red onion, diced bell pepper, pitted and halved Kalamata olives, crumbled feta cheese, chopped parsley, and chopped mint. Gently toss all the ingredients together until well mixed, taking care not to break the feta too much.

    In a separate bowl, prepare the lemon vinaigrette by whisking together the extra virgin olive oil, freshly squeezed lemon juice, Dijon mustard, minced garlic, dried oregano, and a pinch of salt and pepper. Whisk until the mixture is well emulsified and uniform in consistency.

      Drizzle the lemon vinaigrette over the salad mixture. Toss gently but thoroughly to ensure that all ingredients are coated with the dressing.

        Taste the salad and adjust the seasoning, adding more salt, pepper, or lemon juice if desired to enhance the flavors to your liking.
