Ingredients

For the Chicken Skewers:

1 pound boneless, skinless chicken breasts, cut into 1-inch cubes

2 tablespoons olive oil

2 tablespoons soy sauce

2 tablespoons honey

2 cloves garlic, minced

1 teaspoon ground ginger

1 teaspoon smoked paprika

Salt and pepper, to taste

1 red bell pepper, cut into 1-inch cubes

1 yellow bell pepper, cut into 1-inch cubes

Wooden or metal skewers (if using wooden skewers, soak them in water for 30 minutes to avoid burning)

For the Pineapple Salsa:

1 cup fresh pineapple, diced

1/2 red onion, finely chopped

1 jalapeño, deseeded and diced (optional, for added heat)

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt and pepper, to taste

Instructions

Marinate the Chicken: In a large mixing bowl, whisk together the olive oil, soy sauce, honey, minced garlic, ground ginger, smoked paprika, salt, and pepper to create a flavorful marinade. Add the 1-inch chicken pieces, ensuring each piece is evenly coated with the marinade. Cover the bowl with plastic wrap and place it in the refrigerator to marinate for at least 30 minutes, or up to 4 hours for enhanced flavor absorption.

Prepare the Pineapple Salsa: In a separate bowl, combine the diced fresh pineapple, finely chopped red onion, diced jalapeño (if using), and chopped cilantro. Squeeze the lime juice over the mixture and season with salt and pepper to taste. Stir gently to combine all ingredients and allow the salsa to rest while the chicken marinates, letting the flavors develop.

Preheat the Grill: Preheat your grill to medium-high heat, ideally around 400°F (200°C). If you are utilizing a grill pan, place it on the stovetop over medium heat to warm up.

Assemble the Skewers: Once the chicken has marinated, thread the marinated chicken cubes and alternating pieces of red and yellow bell peppers onto the prepared skewers. For a visual pop and delightful flavor, alternate the order of chicken and bell pepper pieces.

Grill the Skewers: Carefully place the assembled skewers on the preheated grill. Grill them for approximately 10-12 minutes, turning occasionally to ensure even cooking. The chicken should reach an internal temperature of 165°F (75°C) and the bell peppers should have a slight char, enhancing their sweetness.

Serve: Remove the skewers from the grill and let them rest for a few minutes to retain their juices. Serve warm, generously drizzled with the freshly made pineapple salsa.

Enjoy Your Dish: For a vibrant presentation, garnish the skewers with additional fresh cilantro and serve with lime wedges on the side. These colorful chicken skewers are ideal for a summer barbecue or a joyous tropical-themed dinner!
