Ingredients

2 medium zucchinis, spiralized

2 boneless, skinless chicken breasts, sliced into strips

2 tablespoons olive oil

3 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and freshly ground black pepper to taste

Fresh parsley, chopped (for garnish)

Optional: 1/4 teaspoon red pepper flakes (if you prefer a spicy kick)

Instructions

Prepare the Zoodles: Use a spiralizer to create zucchini noodles (often referred to as zoodles). If you don't have a spiralizer, a vegetable peeler can be used to slice the zucchini into thin, long strips. Once spiralized, set the zoodles aside on a plate.

Cook the Chicken: Heat olive oil in a large skillet over medium heat. Season the sliced chicken breasts with salt, pepper, and Italian seasoning. Add the chicken strips to the skillet, cooking for about 5-7 minutes, or until they are golden and fully cooked (no longer pink inside). Once cooked, remove the chicken from the skillet and set it aside on a plate.

Prepare the Alfredo Sauce: In the same skillet used for the chicken, add the minced garlic and sauté for approximately 30 seconds, or until fragrant (be careful not to burn it). Pour in the heavy cream and gently bring the mixture to a simmer, stirring occasionally to prevent sticking.

Incorporate the Cheese: Gradually whisk in the grated Parmesan cheese, stirring continuously until the sauce transforms into a smooth and creamy consistency. For an added layer of flavor, you can include red pepper flakes at this stage. Taste the sauce and adjust seasoning with salt and freshly ground black pepper as necessary.

Combine Zoodles and Chicken: Add the spiralized zucchini noodles and the cooked chicken back into the skillet with the Alfredo sauce. Gently toss all the ingredients together, letting the zoodles warm through for about 3-5 minutes. This will allow the heat to soften the zoodles slightly without making them mushy.

Serve: Plate your creamy Chicken Alfredo Zoodles in serving bowls, garnishing each portion with a sprinkle of freshly chopped parsley for a touch of color and freshness. For the best texture and flavor, enjoy immediately while still warm!
