1 cup quinoa, thoroughly rinsed

1 lb ground turkey

1 medium onion, finely diced

2 cloves garlic, minced

1 cup bell peppers, diced (mix of red and green)

1 cup corn (fresh or frozen)

1 can (15 oz) black beans, rinsed and drained

1 can (10 oz) diced tomatoes with green chilies (include juices)

1 teaspoon ground cumin

1 teaspoon chili powder

½ teaspoon smoked paprika

Salt and pepper to taste

2 cups shredded cheddar cheese, divided

½ cup Greek yogurt or sour cream

½ cup chicken broth (or vegetable broth)

Fresh cilantro for garnish (optional)

Preheat the Oven: Begin by preheating your oven to 350°F (175°C) to prepare for baking.

    Cook the Quinoa: In a medium saucepan, combine the rinsed quinoa with 2 cups of water and a pinch of salt. Bring the mixture to a rolling boil, then reduce the heat to low, cover, and simmer for about 15 minutes until the quinoa is fluffy and the water is absorbed. Once done, remove from heat and set aside.

      Sauté the Turkey and Vegetables: Take a large skillet and heat it over medium heat. Add the ground turkey, cooking until it is browned throughout, which should take about 5-7 minutes. Use a wooden spoon to break it apart as it cooks. If there’s excess grease, drain it off.

        Add the Aromatics: To the skillet with turkey, add the diced onion and minced garlic. Sauté for approximately 3-4 minutes, until the onion becomes translucent and fragrant.

          Incorporate the Vegetables and Seasonings: Stir in the diced bell peppers, corn, black beans, diced tomatoes with their juice, cumin, chili powder, smoked paprika, along with salt and pepper. Continue cooking for another 2-3 minutes until the mixture is heated through.

            Combine the Mixtures: In a large mixing bowl, combine the cooked quinoa with the turkey-vegetable mixture. Add in the Greek yogurt (or sour cream) and chicken broth. Stir everything together until fully combined.

              Layer with Cheese: Grease a 9x13-inch casserole dish. Transfer half of the quinoa-turkey mixture into the dish and spread it evenly. Sprinkle 1 cup of shredded cheddar cheese over this layer. Add the remaining quinoa mixture on top, finishing with the rest of the cheddar cheese.

                Bake the Casserole: Cover the casserole with aluminum foil and bake it in the preheated oven for 20 minutes. After this, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and develops a golden color.

                  Garnish and Serve: After removing the casserole from the oven, let it rest for a few minutes to cool slightly. If desired, garnish with freshly chopped cilantro before serving. Enjoy this hearty, cheesy meal while it's hot!
