1 cup shredded mozzarella cheese, divided

1/2 cup grated Parmesan cheese

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional, for a spicy kick)

Salt and black pepper to taste

1 tablespoon olive oil

1 cup marinara sauce (for topping)

Fresh basil leaves (optional, for garnish)

Prepare the Peppers: Begin by preheating your oven to 375°F (190°C). Carefully slice off the tops of the bell peppers and remove the seeds and white membranes. Set the prepared peppers aside for stuffing.

    Cook the Filling: In a large skillet, warm the olive oil over medium heat. Once hot, add the finely chopped onion and minced garlic. Sauté the mixture for about 3-4 minutes until the onion is soft and translucent.

      Brown the Turkey: Introduce the ground turkey to the skillet, using a spatula to break it apart. Cook for approximately 5-7 minutes, or until the turkey is browned and fully cooked. Season it with Italian seasoning, red pepper flakes (if using), salt, and black pepper.

        Combine Ingredients: To the turkey mixture, stir in the chopped spinach, cooked quinoa, 3/4 cup of the shredded mozzarella cheese, and the grated Parmesan cheese. Mix thoroughly until the spinach wilts and all ingredients are evenly combined.

          Stuff the Peppers: Generously spoon the turkey and spinach filling into each bell pepper, ensuring they are packed nicely. Place the stuffed peppers upright in a baking dish.
