20 large jumbo pasta shells

2 cups fresh spinach, finely chopped

15 oz ricotta cheese, at room temperature

1 cup shredded mozzarella cheese (plus extra for topping)

1/2 cup grated Parmesan cheese

1 large egg, beaten

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and freshly ground black pepper to taste

3 cups marinara sauce (store-bought or homemade)

Cook the Pasta Shells: In a large pot, bring salted water to a rolling boil. Add the jumbo pasta shells and cook them according to the package directions, usually around 10-12 minutes, until they’re al dente. Once cooked, drain the shells and rinse them under cold water to halt the cooking process and prevent them from sticking. Set aside to cool.

    Prepare the Filling: In a sizeable mixing bowl, combine the finely chopped spinach, ricotta cheese, 1 cup of shredded mozzarella, Parmesan cheese, beaten egg, garlic powder, onion powder, and a sprinkle of salt and pepper.
