For the Stuffed Shells:

20 jumbo pasta shells

1 pound ground turkey

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup shredded mozzarella cheese, divided

1/2 cup grated Parmesan cheese, plus additional for topping

1 large egg

2 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper to taste

For the Tomato Sauce:

2 cups marinara sauce (store-bought or homemade)

1 teaspoon olive oil

1/2 teaspoon red pepper flakes (optional)

1 teaspoon dried basil

Preheat the Oven: Begin by preheating your oven to 375°F (190°C). Prepare a 9x13 inch baking dish by lightly greasing it with cooking spray or olive oil.

    Cook the Pasta: Fill a large pot with water, add a generous pinch of salt, and bring it to a boil. Once boiling, add the jumbo pasta shells and cook according to the package instructions until they are al dente. Drain the shells in a colander and set them aside to cool slightly.

      Prepare the Turkey Filling: In a large skillet, heat 1 teaspoon of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, or until fragrant. Next, incorporate the ground turkey, using a spatula to break it apart while it browns. Cook until fully browned, then drain any excess fat if needed.

        Incorporate Spinach: To the cooked turkey, add the chopped spinach. Stir well and cook for an additional 2-3 minutes, or until the spinach has wilted. Remove the skillet from the heat and allow the mixture to cool for a few minutes.

          Combine Filling Ingredients: In a mixing bowl, combine the turkey and spinach mixture with the ricotta cheese, 1/2 cup of the mozzarella cheese, Parmesan cheese, large egg, Italian seasoning, salt, and pepper. Mix thoroughly until all ingredients are well integrated.

            Make the Marinara Sauce: In a separate bowl, blend the marinara sauce with the dried basil and optional red pepper flakes for a touch of heat. Spread 1 cup of this sauce evenly across the bottom of your prepared baking dish.

              Stuff the Shells: Take each cooled jumbo shell and carefully fill it with the turkey and spinach mixture. Place each stuffed shell snugly in the baking dish, facing upward.

                Top with Sauce and Cheese: After all the shells are filled, pour the remaining marinara sauce over them. Finish by sprinkling the remaining mozzarella cheese and extra Parmesan cheese generously on top.

                  Bake to Perfection: Cover the baking dish with aluminum foil and place it in the preheated oven. Bake for 25 minutes. After this, remove the foil and continue to bake for an additional 10-15 minutes, or until the cheese is melted, bubbling, and golden brown.
