12 oz (340g) pasta (rigatoni or penne)

2 tablespoons olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 lb (450g) boneless, skinless chicken breasts, diced

4 cups fresh spinach, roughly chopped

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and freshly ground pepper, to taste

1 cup (240ml) heavy cream

1 cup (240ml) chicken broth

2 cups (200g) shredded mozzarella cheese, divided

1 cup (100g) grated Parmesan cheese, divided

½ cup (125g) cream cheese, softened

1 cup (100g) breadcrumbs (optional, for a crunchy topping)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 350°F (175°C).

    Cook the Pasta: In a large pot, bring salted water to a rolling boil. Cook the pasta according to the package instructions until it reaches al dente texture. Once cooked, drain the pasta and set it aside.

      Sauté Aromatics and Chicken: Heat the olive oil in a large skillet over medium heat. Add the finely chopped onion and minced garlic, sautéing for 3-4 minutes until they become fragrant and translucent. Then, add the diced chicken along with the oregano, basil, salt, and freshly ground pepper. Cook everything together for about 6-8 minutes, or until the chicken is fully cooked through with no pink remaining.

        Incorporate Spinach: Add the roughly chopped spinach to the skillet, stirring for an additional 2-3 minutes until the spinach wilts down and reduces in volume.

          Create the Sauce: Lower the heat to medium-low, then carefully pour in the heavy cream and chicken broth. Stir in the softened cream cheese, mixing until the cream cheese is fully melted and integrated into the sauce. Gradually add 1 cup of the shredded mozzarella and half of the grated Parmesan, stirring continuously until the cheese melts into the sauce, creating a creamy texture.
