1 lb ground beef (substitutable with ground turkey)

2 cups broccoli florets (fresh or frozen)

1 cup shredded sharp cheddar cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and freshly cracked black pepper, to taste

1 tablespoon extra virgin olive oil

2 green onions, sliced thinly (for garnish)

Optional: 1 tablespoon soy sauce or tamari for an umami boost

Cook the Quinoa: In a medium saucepan, combine the rinsed quinoa and beef broth (or water). Bring the mixture to a vigorous boil, then reduce the heat to low. Cover the pan and allow it to simmer gently for about 15 minutes, or until the quinoa has absorbed all the liquid and is fluffy. Remove from heat and let it sit covered for an additional 5 minutes, then fluff with a fork and set aside.

    Sauté the Beef: In a large skillet, heat the olive oil over medium-high heat. Add the ground beef along with the garlic powder, onion powder, smoked paprika, and a generous pinch of salt and pepper. Cook for approximately 5-7 minutes, breaking the meat apart with a spatula as it cooks, until it is well browned and fully cooked through.
